Installation

Unpack and inspect for shipping damage. Position on level, stable surface capable of supporting 500 lbs.

  1. Location: Ensure 6" clearance on all sides, away from combustible materials.
  2. Electrical Connection: Hardwire to appropriate 208-240V, 3-phase power supply with proper disconnect.
  3. Ventilation: Install under an approved exhaust hood meeting local codes.
  4. Leveling: Adjust legs to ensure fryer is perfectly level.

WARNING! Installation must be performed by qualified personnel. Ensure power is disconnected during installation.

First-Time Setup

After installation, prepare fryer for initial use.

  1. Fill with oil/shortening: Open drain valve, fill tank to "FULL" line marked on tank interior.
  2. Power on: Turn on main power disconnect. The digital display should illuminate.
  3. Set temperature: Use UP/DOWN buttons to set desired cooking temperature (typically 325°F-375°F).
  4. Run melt cycle (if using solid shortening): Press MELT button and follow prompts.
  5. Heat to set point: Allow 20-25 minutes to reach temperature.

CAUTION! Never operate without oil or shortening. Never exceed maximum fill line.

Specifications

Controls and Settings

Control Panel: POWER switch, Digital temperature display, UP/DOWN temperature buttons, HEAT indicator light, MELT button, FILTER button, High-limit reset button (behind panel).

Operation: Set temperature with UP/DOWN. HEAT light indicates elements are on. MELT cycle slowly heats solid shortening. FILTER mode activates filtration pump.

Settings: Temperature set point, Melt cycle timer (automatic), Filter timer (manual operation). Safety: High-limit thermostat will cut power if oil overheats; reset by qualified technician.

Connecting to Utilities

Electrical: Requires dedicated 208-240V, 3-phase circuit with proper amperage rating (consult nameplate). Conduit connection at rear.

  1. Turn off main power supply.
  2. Remove access panel on rear of fryer.
  3. Connect line wires (L1, L2, L3) and ground wire to terminal block as per wiring diagram.
  4. Replace panel and restore power.

Tip: All electrical connections must comply with National Electrical Code (NEC) and local regulations.

Operating Procedures

Daily frying operation steps.

  1. Power on: Ensure oil is at proper level and temperature is at set point.
  2. Loading: Place food product in basket. Do not overload.
  3. Frying: Lower basket slowly into hot oil. Set timer separately.
  4. Removing: Lift basket and allow to drain over tank for 10-15 seconds.
  5. Shake basket gently to remove excess oil.
  6. Empty food into holding pan.
  7. Between batches, allow oil to return to set temperature.

WARNING! Never leave fryer unattended while in operation. Keep floor area clean and dry to prevent slips.

Filtration & Cleaning

Filter oil regularly (daily for heavy use) to extend life and maintain food quality.

  1. Cool oil to below 250°F.
  2. Place filter pan under drain valve.
  3. Open drain valve, allow oil to flow into pan.
  4. Press FILTER button to activate pump, circulate oil through filter paper.
  5. Close drain valve, return filtered oil to tank.
  6. Clean exterior with damp cloth and mild detergent. Never spray water directly on controls.

CAUTION! Wear heat-resistant gloves. Ensure power is OFF and oil is cool before cleaning interior tank.

Maintenance Schedule

Daily: Check oil level, clean exterior, filter oil (as needed). Weekly: Inspect elements for debris, check drain valve for leaks. Monthly: Inspect electrical connections (by qualified personnel), verify thermostat calibration. Annually: Professional inspection of all safety controls and heating elements.

Replace filter paper with each filtration. Replace gaskets on drain valve if leaking.
