Installation

Unpack and inspect for shipping damage. Position in well-ventilated area with proper clearance.

  1. Gas Connection: Shut off gas supply. Connect appropriate gas line (natural gas or LP) using pipe sealant. Check for leaks with soap solution.
  2. Electrical Connection: Connect to dedicated 120V, 15A grounded outlet for controls and lift.
  3. Ventilation: Install adequate hood ventilation per local codes (typically 100 CFM per linear foot).
  4. Leveling: Adjust legs to ensure fryer is level for proper oil distribution.

WARNING! Installation must be performed by qualified technician. Ensure proper gas pressure (7" W.C. natural gas, 11" W.C. LP).

First-Time Setup

Before first use, season fryer and set operating parameters.

  1. Fill with Shortening: Add high-stability frying shortening to fill line (approx. 35 lbs).
  2. Seasoning: Heat to 300°F for 30 minutes to condition shortening and remove manufacturing residues.
  3. Set Temperature: Use control panel to set desired cooking temperature (typically 325°F-350°F).
  4. Test Basket Lift: Operate lift mechanism to ensure proper function.
  5. Test Ignition: Turn on main burner; verify proper ignition and flame pattern.

CAUTION! Never operate without oil/shortening. Allow fryer to cool completely before cleaning or servicing.

Specifications

Controls and Settings

Display Functions: Shows actual oil temperature, set temperature, timer countdown, and error codes.

Temperature Control: Turn knob to set desired temperature (150°F-375°F). Digital display shows both set and actual temperatures. Basket Lift: UP/DOWN buttons control automatic lift. Timer: Set countdown timer (1-99 minutes) with audible alert. Filter Mode: Select MANUAL or AUTO filtration cycles.

Connecting Utilities

Gas: 3/4" NPT gas connection. Electrical: 3-prong grounded plug. Ventilation: Requires commercial hood system.

  1. Turn off all utilities before connecting.
  2. Connect gas line using approved flexible connector or rigid pipe.
  3. Plug into dedicated grounded outlet.
  4. Ensure ventilation hood is properly sized and installed.

Tip: Install drip pan under drain valve for easy cleaning.

Operating Procedures

Daily frying operations and best practices.

  1. Startup: Turn POWER switch ON. Set desired temperature. Allow 15-20 minutes to reach temperature.
  2. Loading: Place food in basket, lower into oil using lift control.
  3. Timing: Set timer for recommended cooking time.
  4. Removing: When timer sounds, raise basket and allow to drain over fry pot.
  5. Shutdown: Turn POWER switch OFF at end of day. Allow oil to cool before filtering or cleaning.
  6. Filtering: Perform daily filtration to extend oil life (see Section 9).

WARNING! Never add water or wet food to hot oil. Keep floor area clean and dry to prevent slips.

Filtration System

Built-in filtration extends oil life and improves food quality.

  1. Prepare: Allow oil to cool to below 250°F. Place filter pan under drain valve.
  2. Drain: Open drain valve, allow oil to flow into filter pan.
  3. Filter: Pump oil through filter paper back into fry pot.
  4. Clean: Wipe down fry pot interior while empty.
  5. Refill: Close drain valve, return filtered oil to fry pot.

Automatic Mode: Set filter mode to AUTO for timed filtration cycles.

Care & Cleaning

Daily and weekly maintenance procedures.

Daily: Filter oil, wipe exterior with damp cloth, clean crumbs from cold zone. Weekly: Empty and thoroughly clean fry pot, inspect and clean burners, check gas connections. Monthly: Inspect electrical connections, test safety controls.

CAUTION! Always disconnect power and gas before cleaning. Never use water spray or pressure washers.
